Top Chef Season 6
Today Bravo announced the cast for season 6. We taped the show in Las Vegas and as you can obviously tell, I am a cheftestant. It was quite an experience for me and I am excited to see the show air. The date that it should be out is August 19, 2009. It was a lot of fun for me to do and I hope that people find it is fun as I am sure everyone involved did.

I also hope that people will be able to come by the restaurant and try out some of the things that define my cooking. Check out Bravo online to see some pictures of the other cast members that were there with me.


Fourth of July Barbecue
It's time again for our annual fourth of July barbecue extravaganza. This is one of my favorite times of the year, because I love barbecue. I feel that traditional southern barbecue is a dying art that should be revered and practiced only by those who intend to keep the tradition alive and kicking.

For that reason we are slow roasting a whole berkshire hog over hickory coals and dressing it with a very simple vinegary sauce. I call this method “Terminus City Barbecue” because it is a marriage of tradition and modern technical precision. Here are some pictures of the final product.


Wild Alaskan Salmon
I realize that we are a little late to jump on the wild salmon boat this year, but we are finally there. My hesitation is due to wanting to wait a little later in the season for particular fish, from particular rivers. I am a big fan of sockeye salmon over other species. I feel that the fat content of the fish is one of the greatest contributing factors to its deliciousness.

I also prefer fish that are a bit smaller in size, and that is what we have gotten with these copper river fish that we have in house. It is of the greatest importance that we purchase quality fish, from a reliable source so as to help support sustainable fishing. We will only ever use wild caught fish and always do our best to source only product that is dealt with using the same care and concern that we show all of our products here at Woodfire Grill.
